Once the probe is installed into the base, can the actual main device still detect water or just the probe now?

The probe makes contact with the pads on the bottom of the sensor so they will be covered up as well as being raised off of the surface that the base is sat on. Technically, the water leak detector might work if there was enough water to still reach those pads as the base isn't watertight. So, for example, if there was 25mm of water, this would flow into the base and make contact with the pads there.
