You can Associated as many devices as you want since the Association is handled in the Thermostat device.
Note though that there's no arbitration in the Receiver device, so if one Thermostat tells the device to turn on and another Thermostat tells the device to turn off then it will turn off even if the original Thermostat hasn't had its heat demand satisfied.
Usually for multi-zoned heating you wouldn't use Association, you'd use your Z-Wave controller to create all the logic to handle the heat demand from the Thermostat within each zone and then the Z-Wave controller would decide if there's an overall demand from heat and control the Receiver as required.
