I'm not sure the sensor end is suitable for regular submersion. Remember also if it was a metal sink the contacts would have to be slightly higher so they did not short across the sink.

I can't see why not. would probably benefit from a mod to the probe, to two parallel wires where the moulded part is not submerged. Alternatively a window sensor and float switch could be used.

This will send an alert when it detects water - so you will know when the sink has water in it. If you want to do the opposite (have an alert when there is no water), then the Aeon Water sensor will be a better device for you.
